Public Foodscapes

Project manager: Sofie Husby, sohu@plan.aau.dk

Public Foodscapes focuses on the different meanings and aspects of public food. Food and meal times are essential to the public welfare system in the Nordic countries. Moreover, the importance of high quality public food provision is now being recognised and procurement to a lesser extent geared towards the lowest price. Instead, in the future, New Nordic Food in the public welfare system should be high in quality, healthy, sustainable as well as fulfill a number of additional criteria.

At the New Nordic Food conference in Helsinki in 2011, examples of good (food) practices in the public sector were demonstrated. Moreover, and with New Nordic Food as inspiration, the potential for further development was described. Following the result of the conference, groups with representatives from all Nordic countries have continued their work under the headline "Food For Growth" which was also the theme for a second conference, in Oslo 2012.
