Creating future street food

Top chef Jaakko Sorsa may well be the person who has taken the Nordic cuisine the furthest. Geographically, that is.

Ten years ago he established Finds restaurant in the bustling city of Hong Kong and started introducing Nordic flavors to his Asian customers. Ever since his has been the only venue in the city that solely offers Nordic food.

The response has been tremendous. Although around twenty per cent of his customers are homesick Scandinavians who come to Finds to satisfy their cravings for sour cream and herring, a majority of returning guests are Asians who have come to like Norwegian salmon mele with dill, tartare of beetroots and red onions and sourdough bread.

For the opening party at Streat Helsinki, the international street food festival that is currently taking place in the Finnish capital, he joined friends and colleagues to create delicacies such as reindeer burgers, amongst other things.
