Faroese storytelling with taste
The Faroese gourmet chef Leif Sørensen will surprise the guests at the Nordic Cool festival in Washington with completely different flavours. Instead of using steel or china to serve his dishes, Sørensen will serve his food on Faroese materials, such as dried fish bones, whole salmons and Faroese stones. 'It is not just about serving food, but also about showing the unique Faroese expression, that is unlike any other. You could say that in addition to food, this is a type of Faroese story-telling', says Sørensen.
Asked what he will serve, he says that – among other things – there will be raw Faroese cod of sublime quality, as well as salt fish and smoked salmon. Sørensen is well-known for his special chips made from fish skin and dried fish meat, and these will of course be available for the audience to taste. He will also serve Faroese scallops and lobster with a special type of salt derived from seaweed. All the ingredients will be Faroese.
'I want this to be unpolished, different and interesting. It's about offering a culinary experience that people haven't tried before', says Sørensen, who looks forward to an exciting event in Washington next week.
