Artisan Food is a gentle processing of mainly local ingredients, on a small scale, often tied to the farm. They work with natural processes, and people and hands are involved throughout the entire production chain. Small-scale artisan food provides unique products with taste, quality and identity which industry cannot produce.

New Nordic Food The vision for the Nordic Council of Ministers' programme New Nordic Food II (2010-2014) is that the Nordic cuisine will inspire a love of food, taste and diversity - both at home and abroad. NNF II builds on the Manifesto of the New Nordic Kitchen with values such as purity, freshness, simplicity and ethics. New Nordic Food aims to encourage local traditions in new ways, and to support food producers, artisans and entrepreneurs. www.nynordiskmad.org
